Aaloo Choley in Urdu, Hindi

Ingredients

aloo cholay recipe in urdu

Kabli chaney ---½ kg
Aaloo (potato) ----125 gm
Tomato -----2/3
Onion ---------3
Green chili---------½ tea spoon
Red chili powder------1 tea spoon
Nampak (salt) ---hasbe pasand
Imli ---
Lemon---1 chutki
Mitha soda

Method

Subha mein chane saaf kar ke dholain aur in mein soda daal kar inhain pani mein bhigo dain.

Shaam ko namak mila kar chane ubalne ke liye rakh dain, pani chanon mein itna rahe ga keh isi mein gal jayain.

Chane narm ho jayain to patili chulhe se utar lein. Ab aaloon ko bhi boil kar lain, aik bari plate mein chole nikal lain aur isi mein aaloo bhi daal dain.

Piaz ke bareek lache kaat kar dho lain, aur aaloo cholon mein mila dain. Tamatar gol gol aur hari mirch bareek kaat kar iss mein shamil kar lain.

Ab surkh mirch aur pani mein bhigoyi hoyi imli bhi cholon mein daal dain oper se lemon nichor dain, chat pate aaloo choley taiaar hain.

Corn Tikki Papdi Chaat

Ingredients

Potatoes--4, peeled, boiled and mashed
Spring onions---2-3
Sweet corn---150 gm, boiled and mashed
Capsicum-1, thinly chopped
Oil---2 tsp
Mango powder (amchur)--1/2 tsp
Garam Masala--1/4 tsp
Yoghurt-2 cups, whipped
Papdis--10-20
Chutney/ketchup/chaat masala and salt--for garnishing
Red chilli powder-1/2 tsp
Red chilli-1/2 tsp, crushed

Method

Mix the mashed potatoes and corn and keep aside. Heat 1 tsp oil in a pan and saute onions until brown.

Add garam masala. Salt chaat masala and amchur and fry for a while. Let it cool for 2-3 minutes.

Add the onion mixture to the potato mixture and mix well. Make tikkis of 1 inch diameter.

Heat a pan and arrange the tikkis over the pan with fry in 1 tsp oil. Turn upside down and fry again.

Arrange the papdi in a serving plate and place 1 tikki over each papdi. Add the chutneys, yoghurt, chaat masala as per taste and serve hot or cold.
