Kaleji

Ingredients:
Bakray ki kaleji ½ kg

Tazah tamatar (tomato paste) 1 cup

Adrak (ginger grind) 1

Lehsan (garlic grind) 1

Namak (salt)

Surkh mirch (red chili powder)

Siyah mirch (black pepper grind)1 tbsp

Hara dhanya 1 gaddi

Sabz mirch (green chili) 4 kati huyi

Garam masalah pisa hua 1 tbsp

Doodh (milk) ½ cup

Onion grind 1 cup

Oil ½ cup

Cooking Procedure:

1 Kaleji ki botyan doodh mein 5 minute kay liye bhigo kar lehsan malay pani say dho lein.

2 Patili mein ½ cup oil daal kar onion sonahri kar kay is mein kaleji daal dein.

3 Kaleji ka pani khushk ho jaye to adrak, lehsan daal kar bhoonein.

4 Tamatar ka paste, namak, surkh mirch shamil kar kay mazeed pakayein

5 Kaleji gal jaye to theek hai warnah thora sa pani daal kar siyah mirch, sabz mirch aur garam masalah bhi shamil kar dein paknay kay baad 3,4 minute kay liye dam par rakhein

6 Utartay waqt kutra hua hara dhanya bhi shamil kar dein.

7 Dish mein nikal kar muli aur salad kay patton say sajayein. Mazadar kaliji taiyar hai.

 

Kaleji ka Korma:

Ingredients:

Kaleji (darmianah size) 1

Laal mirch hasbe zaiqah, haldi ½ tbsp

Garam masalah 1 tbsp

Kali mirch (black pepper)5

Long (clove ) 4

Choti alichi 2

Khushk methi (Fenugreek)1 ½ sp

Piaz (onion) darmianah size 3

Lehsan (garlic grind) 1tbsp

Dahi (yogurt) 1 cup,

Namak (salt) hasbe zaiqah

Cooking Procedure:

1. Kaleji kay darmianay size kay tukray kar kay dho lein.

2. Piaz cheel kar lachay dar kaat lein aur dahi ko phaint lein.

3. Ab aik degchi mein piaz kay lachay aur ghee daal kar aanch par rakh dein.

4. Piaz badami ho jaye to in mein dahi, methi, garam masala aur baqi tamam masalay, 1 cup pani dal kar bhoon lein.

5. Is kay baad kaleji dal kar mazeed bhunein.

6. Bisaind (boo) khatam ho jaye to galnay kay liye pani dal dein, dhimi aanch par paknay dein, jab kaleji gal kar ghee chor day to samajh lein keh Korma taiyar hai.

7. Garam garam pesh karein.
