Ingredients

Gosht (meat) parcha begair haddi

Tamato

pyaaz (onion)

Lahsun (garlic) pisa hoya

Sirka (vinegar)

Kachri darmiani

Namak (salt)

Kali mirich (black pepper) pisi hoi

Oil

Dahi (Curd)

Garam masala

Cooking Procedure

1. Gosht saaf karkay sirka, namak aur pisi hoi kali mirich laga kar aik ghante (1 hour) rakh dain.

2. Sath khane ka aadha chamcha dahi(Curd) phaint kar lagain.

3. Do piaaz(onion) cheel kar bareek lachey dar kaat lain.

4. Fry pan ya degchi mein piaaz (onion) brown tal kar dish mein nikal lain.

5. Tali hoyi piaaz bareek pees lein.

6. Kachri bhi pees lain.

7. Pisi hoyi piaaz aur kachri main dahi namak, lahsan aur garam masalah daal kar phaint lein.

8. Ab gosht chote chokor tookray kar lein.

9. Degchi mein gosht daal kar panch minut bagair tel kay bhunain chamcha musalsal chalati rahain gosht mein tel aur aik piaali pani daal kar taze aanch par bhunain aik do ubaal aajaye to aanch darmiani karlein.

10. Pani khushk kar kay dahi ka aameza daalein sath tamatar (tomato) kaat kar daal dain. Dheemi aanch par pakain.

11. Pani khushk ho jaye to chand minute dam par rakh dein.

Gosht 1 kg

Ghee 250 gm

Piaz 150

Adarak 20 gm

Lehsan 10 gm

Bari alichi 10 gm

Hara dhanya chan pattiyan(leaves)

Dahi ½ cup

Black pepper 1 small tsp

Surkh mirchein 2sp

Namak hasbe zaiqah

Haldi ¼ sp

Procedure:

1. Sab say pehlay lehsan, piaz aur adrak cheel kar kaat lein aur alag rakh lein.

2. Is kay baad aik bartan mein ghee daal kar chulhay par rakhein is mein piaz kay thoray say lachay surkh kar kay nikal lein.

3. Phir masalh bartan mein daal kar khoob achi tarah bhoonein.

4. Thori der kay baad is mein gosht kay tukray dalein.

5. Halki aach par bhoontay huye pani ki chand chintein lagaye aur dahi mila dein.

6. Thori der tak chulhey par raknay kay baad nichay utar lein.

7. Gehri dish mein nikal kar upar haray dhanya kay kutray huye pattay chirak dein.
