Ingredients

Masalay Wali Biryani

Gosht---------½ kg
Piaz (Onion) ----------250 gm
Rice ----------½ kg
Tomato ----------250 gm
Potato ----------250 gm
Coriander leaf (hara dhanya) ----------½ gaddi
Mint ( podina) ----------1/4 gaddi
Hari mirch ----------8 or 10
Yogurt ----------½ pao
Coriander powder (Pisa dhanya)----------1 tbsp
Red chili powder ----------1 tbsp
Garlic/ginger paste ----------½ tbsp
Tamarind (haldi) ----------½ tbsp
Salt---------½ tbsp (salan ke liye)
Salt ---------- ½ tbsp (chawal ke liye)
Sabit garam masalha ----------2 tbsp
Darchini -----1 tukra
Black pepper ----8 or 10
Bari alichi----- 1
Sabit zira ----¼ tbsp
Clove (Long)-----4
Ghee/oil
---½ cup

Method

Piaz ko bareek kat kar oil mein fry kar lain phir aadhi piaz nikaal kar alihda rakh dain baaqi ki piaz mein gosht, lehsan, adrak, pisi hoyi laal mirch, dhanya, namak, haldi aur sabit garam masalha daal kar etna pani dalin keh gosht gal jaye.

Jab gosht gal jaye to is mein aloo kat dalain jab aaloo gal jayain to achi tarah bhoon lain.

Is ke baad tamamtar aur hara masalha buhat bareek kaat kar dalain sath dahi bhi phaint kar daal dain, jab salan bhun jaye to chulhe par se utal lain.

Chawalon ko boil kar lain aur sath hi namak aur ½ tbsp kala zira aur choti alaichi bhi daal dain jab chawal aik kani rah jaye to chalni mein daalain

½ tbsp zardey ka rung thorey se pani mein ghol kar dalain aur 10 minute ke liye dam par rakh dain, gost ko bhunte waqt 4/5 khushk aalo bukharay bhi daal dain.
