Mutton Tikka in Urdu and Hindi

Ingredients

tikka recipes in Urdu

Bakray ka gosht(mutton)----- 250gm

Zafran--------- 1 chamcha

Piaz(onion) ------75 gm

Adrak (ginger)-----1 tukra

Surkh mirchein(red chili) -----hasbe mansha

Sabz alichi----- 4

Garam masalh ----1

Lemon----- 2

Namak(salt)----hasbe zaiqa

Procedure

1. Bakray kay gosht ki choti choti botyan banyein aur adrak cheel kar bareek kat lein.

2. Zafran pees kar rakh lein sabz alichi kay danay nikalein aur pees kar in mein pisa hua garam masalah zafran surkh mirchein namak aur lemon ka ras mila kar khoob achi tarah mix karein.

3. Aik bartan mein ghee garam karein is mein piaz surkhh kar kay gosht kay tukray dalein.

4. Mamuli sa bhoon kar kuchla hua adrak aur maamooli si namak mirch shamil karein thora sa pani dalein halki aanch par 15 minute tak pakayein.

5. Jab gosht gal jaye to bartan ko aag say alag kar lein is kay baad aik fry pan mein ghee daal kar chulhay par rakhein.

6. Is mein gosht kay tukray fry kar kay bahir nikalein aur thanday kar kay masalhay wale aamezay mein daal kar milain ½ ghantah tak isi tarah paray rehnay dein.

7. Is kay baad sikhon mein piroyein aur koilon(coal) ki halki aanch par tikkay bhoonein.

8. Surkh honay par aag say alg karein aur plate mein nikal kar garam garam tikkay chtni kay sath khanay kay liye pesh karein.


Parcha Kabab in Urdu and HIndi

Bakre ki raan ka gosht (parche)--------1/2 kg
Sufaid chane-------1 tsp
Adrak (garlic)--------1” ka tukra
Piaz (onion)-------1
Pisa hua kacha papita--------1 tsbp
Namak-------
Bari alichi------3
Pisi huyi surkh mirch-----1tsp
Siyah zirah -----------1 tsp
Coconut powder-------1 tbsp
Lehsan(garlic)-----8-10 jawe
Long --------6
Black pepper------1/2 tsp
Pisi huyi jaifal jawetri---1/4 tsp
Khashkhas ----------1 ½ tsp
Dahi---------1/2 cup
Cooking oil---------

Procedure

Parchon ko lambayi mein kaat kar dho lein chlani mein daal kar rakh dein.

Grinder mein dahi, alaichi ke dane, kacha papitah, lehsan, adrak, piaz, zirah, coconut powder, jaifal jawetry, sabit siyah mirch, khashkhas aur chane daal kar grind kar lein. Namak aur surkh mirch bhi mila lein.

Grind kiye huye pest ko cup mein nikal kar parchon ko is mein daal kar spoon ki madad se pest mal dein. Marinate parchon ko 3 ghanton ke iye fridge mein rakh dein.

Naan steak frying pan mein oil garam kar ke parchon ko thora thora kar ke tal lein.
