Potatoes---4 large, cut into chunks
Garlic clove---1, finely chopped
Brown mustard seed --2 tsp
Ground cumin---1 tsp
Fennel seeds---1 tsp
Lemon juice---good squeeze
Salt and black pepper- to taste
Fresh coriander and lemon wedges
Chopped--- to garnish
Bring a saucepan of salted water to the boil, add the potatoes and Simmer for about 4 minutes, until just tender. Drain well.
Heat the oil in a large frying pan and add the garlic along with all the whole and ground spice. Fry gently for about 1-2 minutes, stirring until the mustard seeds start to pop.
Add the potatoes and stir fry over a moderate heat for about 5 minutes, until heated through and well coated with the spicy oil.
Season well and sprinkle over the lemon juice. Garnish with chopped coriander and lemons wedges. Serve as accompaniment to curries or other strong- flavoured dishes.

Lehsan (garlic) 6 jawe
Haldi (turmeric) ½ sp

Is kay baad dahi daal kar dhak dein pani khushk ho jaye to
baqi piaz daal kar bhoonein.
Phir is mein gobhi daal kar degchi ka dhakna band kar dein
aur dhimi aanch par paknay kay liye rakh dein.
