Ingredients

Baighan (brinjal) 1 kg

Piaz (onion) 150 gm

Ghee

Lehsan (garlic) 10 jawe

Adrak (ginger)15gm

Namak (salt) hasbe zaiqa

Til(Sesame) 3 tbsp

Surkh mirch sabit (red chili) 4

Sabit dhanya (coriander seeds) 2 tbsp

Khashkhash 3

Haldi (turmeric) 1 tsp

Mong phalli (nut) 4 tbsp

Naryal pisa hua (coconut) 4 tbsp

Sufaid zirah (cumin seed) 3 tbsp

Hari mirch (green chili) 7

Hara chanya (coriander leaves) 10

Pisi huyi siyah mirchein (black pepper) hasbe zaiqa.

Method
Mong phalli kay danon, khashkhash aur sufaid zirah ko tawe par alag alag bhoon kar bareek pees lein.

Lehsan, piaz aur adrak cheel kar bareek kaat lein.

Brinjal kay char char tukray is tarah karein keh woh aakhri siray say aapas mein juray rahein.

In baighanon ko namak kay pani mein bhigo kar thori der kay liye rakh dein.

Sabit dhanya, til aur naryal ko khoob achi tarah pees kar rakhein.

Ab aik bartan mein ghee dal kar chulhay par rakhein jab ghee garam ho jaye to is mein lehsan, piaz aur tamam pisa hua masalah daal kar bhoonein.

Sabit surkh mirchein bhi aik dalein jab masalah bhoon jaye aur ghee oper aajaye to is mein baighan(brinjal) daal kar thora sa pani bhi shamil karein.

Halki aanch par pakayein jab baighan narm ho jayein aur poori tarah say pak jayein to oper say hara dhanya aur hari mirchein bareek kaat kar shamil karein.

Thori der tak bartan ko chulhay par rehnay dein is kay baad aag say alag karein mazeedar baghara baigan ki dish taiyar hai. Dastarkhuan ki zinat banayein.

Bagara Baingan Recipe in Urdu

Ingredients

Baigan (brinjal round) ------- ½ kg
Piaz (onion 3 raw grind) ---4
Karhi patte---some pieces
Kalonji(black seed)---1/2 tsp
Khashkhash, sufaid til (poppy seeds, white sesame seeds) ---1 tbsp
Sufaid zira(cumin)----1 tbsp
Sabit dhanya(coriander seeds) ---2 tbsp
Khopra powder---1 chota tukra
Mong phali(nut)---10
Imli ka gooda(Tamarind)------4 cup
Piaz (onion 1)
Hari mirchein (green chilli) ----------4
Pisa hua lehsan, adrak (garlic, ginger paste) ----1 tbsp
Pisi hui haldi(turmeric powder)
Salt as required
Bagharne ke liye
Sabit laal mirchein (red chilly) -----4
Lehsan(garlic)-----3 jawe
Methi dana(Fenugreek Seeds)------------7
Sufaid zirah (cumin) -----------1
karhi patta---------some pieces
Oil---------1 cup

Method

1 onion ko chilkon samet chulhe par jalayein, phir chilka utar kar pees lein aur thora sa pani daal kar garha amezah bana lein.

Khashkhash, til, zirah, khopra, sabit dhanya aur mong phali frying pan par bhoon kar grind kar lein aur onion mein shamil kar dein.

Baingan ko drmian se chira lagayein aur aik aik chutki namak aur piaz ka masalah har baingan ke andar bharein. Bacha hua masalah mehfooz kar lein.

Garam tail mein baghar ke ajza badami kar ke grind onion, garlic, ginger, turmeric aur red chilly daal kar halka sa bhoon lein.

Masalhe ke uper bhare huye baighan ki teh bicha dein. Oper se namak aur aik cup pani shamil kar ke cover kar dein.

Baingan masalhe mein baith jayein to imli ka gooda bacha hua masalha, hari mirchein, karhi patta, kalonji aur 1 cup pani daal kar 5 minute ke liye halki aanch par dam par rakhein. Jb oil oper aajaye to utar lein, mazedar baghare baingan tiyar hain.
