Cauliflower--- ½broken into small florets
Potato---1 large, peeled and diced.
Green beans--4 oz, trimmed
Zucchini---2, halved lengthwise and sliced
Fresh ginger--- 1 piece, peeled
Plain yoghurt-- ½ tsp
Ghee or vegetable oil--2 tbsp
Cumin seeds ---1 tsp
Cloves, cinnamon and cardamom---1 pinch each ground
Salt and freshly ground black pepper ----- to taste
Bring a large pan of water to a boil. Add the cauliflower and potato and cook for 5 minutes. Add the beans and zucchini and cook for 2-3 minute.
Meanwhile cut the chillies in half. Remove the seeds and coarsely chop the flesh. Finely chop the ginger. Mix the chillies and ginger in a small bowl.
Drain the vegetables and turn them into a bowl. Add the chilli and ginger mixture with yoghurt, ground coriander and turmeric. Season with salt and pepper and mix well.
Heat the ghee or oil in a large frying pan. Add the vegetable mixture and cook over a high heat for 2 minutes, stirring from time to time. Stir in the garam masala and cumin seeds and cook for 2 minutes. Stir in the sugar and remaining spices and cook for 1 minute or until all the liquid has evaporated. Serve hot.

matar, saim ki phalli ko halka sa tal lain ta keh inn ka pani
khushk hojaye in ko bhi pees kar bhartey mein mila dain phir
sarey masalhe mila kar ½ ghante ke liye rakh dain ta
keh rayi ki zara si khatayi aa jaye.
